I'd say an overdub is adding an extra layer of sound over an existing recording.
e.g. you might record a drum track, and then overdub guitars and vocals.

It depends in what sort of context, if your using it in a midi enviroment, it means you can record to a midi track which already has note in, and only adds the new ones on top without replacing the old ones...

When you record a band, rather than record everything in one go - technically a "live" recording - everything is recorded seperately.
eg:
1. Record the drums - normally you can be playing bass / guitar and singing in the control room while you are doing this, so your drummer doesn't get lost.
2. Listening to the drum track, record the bass and guitars.
3. Listening to the full track, record the vocals.
Stages 2 and 3 are overdubs.
Basically, overdubbing implies recording OVER THE TOP of something - but from the point of view of ADDING to it, rather than writing over it, destructively.
